Here's an interesting question... How many people here have tried to recreate the Chicago style dog (mustard, relish, tomatoes, onions, pickles, etc.) with a sub-par dog? If so, how did it turn out for you?

In my college cafeteria, I used to actually sneak over to the salad bar and cut up tomatoes and such in an effort to recreate the Chicago hot dog, but using dorm room caliber hot dogs. I thought it was decent, but no substitute for the real thing.

Oh yeah, I do it at least a couple times a year at BBQs in Indiana and Kentucky. Most of what you need is usually at the BBQ, it just takes a trip to the fridge to find pickles and maybe raid the salad for tomato. Like you said, it works but is just not the same.

The reverse works really well (using other good sausage instead of a hot dog). I make Chicago style dogs with the smoked Thuringer or Veal sausage from Paulina Market all the time. Awesome.

I used to sneak a bit of ketchup on my dog at Portillo's when I lived up there. I'm weird though, because I really don't like tomatoes, so that's my substitute.

And sport peppers are the best thing in the entire world. I miss them. I wonder where I could find those guys outside of Chicago ...

The veal wieners at Gene's Sausage are amazing.

How about Daisy hot dogs? I used to love those, very peppery. I liked to boil them until they busted open. I used to buy them in butcher shops in strung together links.
