I could see sport peppers being good on it, even if peperoncini are proper. Mayo, I personally think is an abomination, but many people like it on roast beef sandwiches. So, in sum, meh.

To each their own; he's from out of town right? My Canadian born wife eats her hot dogs with Mayo and sometimes her fries also. Although I like all the Chicago trimmings on my hot dog I also like ketchup in addition and can pass on the celery salt.

I do agree from the standpoint that is shows a close-mindedness to trying new things. Sometimes these individuals need a little coaching or a simple, "If you don't like it that way I will be glad to eat yours and buy you another the way you originally wanted it."
Some people are annoyingly close-minded and picky about what they eat.
BUT at the end of the day, so what? What's it to you except a great way to gossip about human nature.
Oh, and you can also order a Beef with sweet peppers and it's OK to order dry or wet or in between!

Giardiniera is the proper condiment for Italian Beef, that or roasted sweet peppers.

Mayo is perfect with fries, not beef sandwiches.

Good, real mayo improves most sandwiches. It should be automatic on hamburgers and club sandwiches and especially BLTs, as the oil in it helps keep the toastiness of the bread safe from the moisture of the vegetables and the egg yolks add some rich flavor and mouthfeel.

That said, I've never had it on an Italian beef and I don't think it'd be appropriate, especially if the sandwich is dipped. When it's dipped, the bread's already well past "protecting" from moisture for obvious reasons, and if it's good broth there's a little bit of fat in it for the taste and mouthfeel, which would render mayo redundant.
