Been away a while now and we always hit Portillos for Beef sandwiches immediately (after Gold Coast Dogs in the Airport).
My list would be similar to those posted:

I love White Castle! I deviated from my gluten-free diet the last time I was in Chicago so I could have some lol.

One thing I noticed since moving away is that outside the occasional fast food stops, I rarely ate at chains back in Chicago. I ate at chains a lot more since moving south. I think mainly because the local restaurants people would recommend to me that were supposed to be so great, I wasn't too impressed with.

I wouldn't call it a Chicago thing necessarily but that is where I first had them. We settle for frozen but it is not as good as fresh. The closest store is 300 miles from home now so we don't get fresh very often.

Well its a Chicago thing for me because outside of the Chicago area Illinois doesn't have white castles (at college Isu it was torture). White castles fries and burgers hit the spot at ANY hour of the day/night which is awesome. And on my road trip last year I realized that white castles extends from Chicago east through a couple of states I believe and then south of Kentucky into bama and Florida/south Carolina are a competitor that tries to emulate whitties called crystals. Johnnies beef on North Ave. The chinese restaurant half a block east of Johnnies. Villa Nova pizza in Stickney and Home Run Inn. Also various products from Crawford Sausage Co (Daisy brand) namely prasky, minced ham and cream sausage to name a few. Elliots corned beef. Theres others but these rank close to the top.

Mmmmm Chicago food!

You may be thinking of Bombacignos
558 w. Van Buren. Hole in the wall. Building literally tilts. Best sandwiches in the loop. (Okay just outside the loop. ) Pasta specials. Lunch only M-F.
