This one was beef (lomo de res) and it's a Cuban-style cut of ribeye about a quarter inch thick. But I've seen it pork too. Maybe not purposely "fusion" but likely an evolution of Chicago's Mexican food scene since I first read about it years ago when Robb Walsh wrote briefly on it. This was 20 years ago, but this still explains how a unique style formed here.

The Cuban presence in Texas is relatively small, and the few Cuban restaurants there get more influenced by Mexican/Tex-Mex than the other way around. Some of them might do something like this, but tacos con lomo de res is not something you're going to find in a mainstream taqueria or Tex-Mex chips-n-queso joint in Texas.

L'Patron (3749 W. Fullerton) has the best al pastor I've ever had. I've tried near and far for competition including Little Village and Pilsen (and any city I visit), and nothing matches it to date. Happy to be proven wrong!

El Asadero is pretty good last I remember. I will have to go back to refresh my memory.

I don't love Los Comales. But it's pretty f'ing good at 4am.

Yes I do love Taco Bell sometimes .. it has a flavor that taco stands do not have, but its good anyhow.. I go to both.

What about the Frontera Grill or other of Rick Bayless' places? Have never had a chance to try them.
