My sister is looking to get married in Chicago (where our family lives). She is in NYC and I am in Houston, so I need some advice about venues.

1) Ceremony/reception in the same place

2) She and her fiance follow a gluten-free/vegetarian diet, so we need to have a place that will allow any caterers. The Chicago Park District for example, will only allow their preferred providers.

3) She'd like it to be outdoors, or at least have the possibility to allow people to go outside.

Any ideas?

Something else to consider, there is a HUGE trend with halls/centers including "gratuity" in their menu selections. Customers come away feeling the wait staff is taken care of, so to speak, in relation to tips.

When, actually, the CATERER pays the wait staff in many venues and the banquet hall KEEPS the gratuity/tips.

Especially true in family owned halls - THEIR family: bartend staff/bus people see the tips. Very rare do the SERVERS see any tips lately!

So, when you enter the hall remember the WAIT staff fills each and every one of those water glasses *ice AND water AND refills, sets bread if necessary, delivers soup, salads, food plates: THREE MEATS and VEGGIES mean up to FIVE LARGE BOWLS ON EACH OVER CROWDED TABLE *filled with centerpieces, candy, notes, stories, flower petals, purses, settings, etc.

THEN, CLEARS - sometimes NO BUS PEOPLE are included! Takes glasses and used settings to kitchen or to bus area and SERVES DESSERT and COFFEE.

While the BUS staff clears ONLY BAR glasses but get the TIPS. Five to six hour pay for a wedding party of 350? in THIS area? About $65.00 total. Non stop on your feet moving. Each server usually has four tables of 10 each. You MUST move quickly and in unison to get the food out there as soon as possible. But if the bridal party is doing slide shows, pictures, and four speeches with two to three prayers...you will sit there with water until they are served first.

The Bride/Groom have specific instructions for the wait staff.
