I'm hoping there are a few bars/venues in and around Chicago to hear some great live acoustic guitar playing.

I know that this isn't exactly what you are looking for, but a lot of Potbelly's restaurants have live acoustic guitar and singing. I'm not sure what hours they do it, but I have heard it around lunchtime. This is the only place that I've personally seen it. You could also try the Old Town School of Folk Music in Lincoln Square. They may have concerts or suggestions. Their website is www.oldtownschool.org.

Although I am a bit out of the loop at the moment with that scene, one place I know is the Holiday Club, which has open mic on Tuesday nights. Most of the acts involve acoustic guitar.

Karaoke/Open Mic

Also, look on sites like Metromix and Citysearch. Type open mic in the search field and there you go.

Depending on what type of music you like, may want to check out the Old Town School of Folk Music. They have amazing shows there that are very affordable, although it's not a bar-type vibe. Styles range from American folk, to bluegrass, blues, and many world music styles.

There's 'acoustic guitar' and 'acoustic music'.

Northwestern University has amazing and affordable classical guitarists performers.

Old Town School of Folk Music has the concerts on line. You recently missed John Gorka, Leo Kotke. best concert venue in the city, acoustically. though, definitely not a club vibe.

If you like Gypsy swing music in the style of Django Reinhardt, go to the Green Mill on Wednesday nights and catch Alfonso Ponticelli and Swing Gitan. The Green Mill is at 4802 N. Broadway, and the cover is a very reasonable $6. Also there's a really good Ethiopian restaurant, called Demera, right across the street, so you could make it a very multi-ethnic evening.

Check out the Red Line Tap's open mic on Thursday nights!
I haven't been in a while since I moved further away, but there have always been amazing guitar players there!
