Are we pretty much free to believe whatever we want about God, the Bible, the Church, etc. as long as we "express our love of God and man"?
Or are there some ideas about these things which are established as necessary to be a true follower of Christ?
The New Commandment is the only rule needed. God is Spirit and we must worship Him in spirit and truth is a good guide and the truth is that forms are not an issue so long as the basic criterion is met.

Did Jesus command his followers to "make disciples of all nations baptizing them in them in the name of the Father, and the son, and the Holy Spirit?"
Honestly? Because of the doctrinal issues. Not just prayer to Mary, the Saints, the papacy, and others....but the whole issue of infused versus imputed righteousness. There is no animosity here, I'm not going to tell you that the RCC is the ***** of Babylon or any such nonsense. I don't hate the church, or the pope.
The Bible teaches imputed righteousness -- that Christ fulfilled the Law, and died a blameless death on the cross, giving us his righteousness. We cannot please God by anything we say or do. Our good works are not beneficial to our salvation. We do them because we are saved -- not to gain God's favor. We can never lose our salvation -- because we didn't earn it.
The RCC teaches infused righteousness -- meaning that Christ fulfilled the Law, died a blameless death on the cross, and now offers us his righteousness....but the difference is that they teach that he enables us to do good works that are meritorious -- thereby earning our salvation. If we commit a moral sin, we must be forgiven and brought back into a "state of Grace". We don't know if we will be saved until we meet Jesus after we die.

You misunderstand religion in general. I agree, it is man made. So why make such a big fuss about it. You will not find anything better anywhere. God is a mystery.
