Leviticus 23:6 says - "And on the fifteenth day of the same month is the Feast of Unleavened Bread..."
However, Matthew 26:17 says - "Now on the first day of the Feast of Unleavened Bread the disciples came to Jesus, saying to Him, "Where do You want us to prepare for You to eat the Passover?"

How can these 2 verses be reconciled?

The bold was added for clarity. No contradiction here.

Passover and the Feast of Unleavened bread were originally instituted as two separate events. But in time, the two events became merged in popular Jewish thinking as one combined event. The entire Feast of Unleavened Bread along with Passover Day was often referred to as an eight day Passover Week , and this is reflected in the New Testament. See Luke 2:41-43; Acts 12:3-4.
The Encyclopaedia Judaica confirms the mistake committed by these Jews: “The feast of Passover consists of two parts: The Passover ceremony and the Feast of Unleavened Bread. Originally, both parts existed separately; but at the beginning of the [Babylonian] exile they were combined,” Vol. 13, p. 169.
In the time of Jesus then, Passover and the Feast of Unleavened Bread were loosely referred to somewhat interchangably.
In Antiquity of the Jews, book 2, chapter 15, section 1, Josephus mentions that the Jews keep a feast for eight days called the Feast of Unleavened Bread. This included the Day of Passover, as well as the seven day Feast of Unleavened Bread which followed. After stating the reason for the observance, Josephus writes;
''Whence it is that, in memory of the want we were in then, we keep a feast for eight days , which is called the feast of unleavened bread.''
There is then no discrepancy. The New Testament simply expresses the loose and popular way that the Jews of Jesus' day thought of Passover and the Feast of Unleavened Bread.
It may very well be that since Exodus 12:6 seems to say that the Passover animal is to be killed on the 14th (and I think it's usually thought that the Messiah was the anti type who took the place of the animal with His death) that the 14th was the date of His sacrifice.
Does the Bible indicate what day of the month He died on? And does it REALLY matter?
Mike gave the context of how it fits together
I do believe that the dates and times are important
That is why there are “watchers” and the instructions to watch and be ready for the appointed time
Mat 24:38 For as they were in the days before the flood: eating, and drinking, marrying, and giving in marriage, until the day when Noah went into the ark.
Mat 24:39 And they did not know until the flood came and took all away. So also will be the coming of the Son of Man.
Mat 24:40 At that time two will be out in the field; the one is taken away, and the one is left;
Mat 24:41 two grinding at the mill; one is taken away, and one is left.
Mat 24:42 Watch, then, for you do not know in what hour your Lord comes.
Mat 24:43 But know this, that if the housemaster had known in what watch the thief comes, he would have watched and not have allowed his house to be dug through.
Mat 24:44 Because of this, you also be ready, for in that hour you think not, the Son of Man comes.
Mat 24:45 Who then is the faithful and wise servant whom his Lord has set over His household, to give to them the food in season?
Mat 24:46 Blessed is that servant whom his Lord shall find so doing when He comes.
Mat 24:47 Truly I say to you, He will set him over all His substance.
Mat 24:48 But if that wicked slave says in his heart, My Lord delays to come,
Mat 24:49 and begins to beat his fellow servants, and to eat and to drink with the ones drinking,
Mat 24:50 the Lord of that slave will come in a day in which he does not expect and in an hour which he does not know,
