I know people that swear up and down that they are Christian but yet they are insensitive and selfish. Why are people like this and how do we minister to them and encourage them to be more sensitive and compassionate and less cold-hearted?

The same reason that most people are insensitive and selfish: it’s human nature.

Christians are people and people can be insensitive and selfish. Some more so than others. It's part of the sin nature we all have. And bad life experiences can cause some people to become that way. With spiritual growth a believer who is prone to insensitivity and selfishness should become more sensitive and giving, but most Christians never grow spiritually and remain spiritual infants all of their Christian life and may even remain in a state of perpetual carnality under the control of their sin nature.

The key to spiritual growth is learning, metabolizing, and applying the word of God in your life under the filling of the Holy Spirit. Without spiritual growth a Christian is going to pretty much live according to the trends of his particular old sin nature. For some people that can manifest strongly as insensitivity and selfishness. But we all have been guilty of those things at times to some extent.

A person has to want to change his less desirable character traits before he can grow out of them. And unless he does want to, I'm not certain that any amount of encouragement is going to motivate him to do so.

Jesus would do, Don’t look anything like Jesus ?
Love God
Forgive
Love your brother
Love your neighbor
Love your enemies
Pray for those who despitefully use you

People have different qualities regardless of their religion, or lack of religion.

And some of the most loving people I know are religious or spiritual. Christians, Muslim, Buddhists, usw.

Perhaps you should widen your social circle to include people who know what they are talking about.

Some people are insensitive and selfish. It's who they are. Some are Christians, some are atheists, some are of other religions.
