Is Genesis symbolic or literal? (Gospel, doctrine, believe, evolution)

I have heard time and time again Christians who believe in evolution or millions of years, even say that Genesis can only be symbolic and not be taken literally.
Did you realize New Testament authors quoted from the literal history of Genesis. Jesus Himself quoted from Genesis, when asked about marriage. He answered, “Haven’t you read,” he replied, “that at the beginning the Creator ‘made them male and female,and said, ‘For this reason a man will leave his father and mother and be united to his wife, and the two will become one flesh? So they are no longer two, but one. Therefore what God has joined together, let man not separate.”
Jesus was very adamant about what God did, there was no hint of symbolism in that statement.
Peter quoted from Genesis, Paul quoted from Genesis where his whole gospel was about the fall of man
Genesis 1-11 covers the creation, corruption, catastrophe, confusion, anthropological, biological, astronomical, geological history of the universe according to our Creator who saw it happen
Every single biblical doctrine of theology is founded directly or indirectly in Genesis.
-Why did Jesus die on the cross? (Genesis 1-11)
-Why do we die? (Genesis 1-11)
-Why are we sinners? (Genesis 1-11)
-Why do we wear clothes? (Genesis 1-11)
-Why do we have a 7 day week? (Genesis 1-11)
-Why do we need a new heaven and a new earth? (Genesis 1-11)
-Why is Jesus called "the last Adam"? (Genesis 1-11)
Can anyone name just ONE doctrine of theology that is ultimately directly or indirectly not found in the book of Genesis? If Genesis is not true or can not be taken literally then the entire bible falls apart.

Again, a spiritual book about a spiritual God must surely mean that the 7 days can't be interpreted as a Sunday-Saturday world tour. A day can be a thousand years, or more or less - we're tripping over sideshows and missing the main event.
But, beloved, be not ignorant of this one thing, that one day is with the Lord as a thousand years, and a thousand years as one day.
2 Pet 3:8
If a day to God counts as a thousand years, that gives us six thousand additional years. That doesn't account for billions of years of evolutionary history. People get way too hung up on this debate though, as whether it's six literal days or not doesn't matter to ones salvation.
