Their downtown area is absolutely hopping on weekends and they have a much more diverse selection of bars, clubs, etc etc etc. The scene and atmosphere overall is just a lot better. And although 16th street isn't the center of nightlife in Denver, it is way better than any entertainment/shopping area in Minneapolis.
Races is hard to say. Probably a tie. Denver and the surrounding area is pretty heavily latin-ized though, and Minneapolis is not.
Shopping definitely goes to Denver.
Events... Minneapolis probably, but only because Denver-ites are so busy doing other things.
Denver has a much larger hispanic population, Minneapolis doesn't. Larger black population, Asian population (even though it's more noticeable across the river in St. Paul), in Minneapolis. Diverse in different ways.
I think Minneapolis's Hispanic population, in particular, has grown tremendously since 2000. So may have Denver's; my point is only that Minneapolis in the 2010 census is almost certainly going to look a lot different than 2000.
I always get a good laugh out of white people arguing over which city has more non-white people in it, as if this is some true, final measurement of how great a city is.
