Probably San Antonio. Ironically though, I lived in Texas for several years and never been to SA. But I have been to LA. LA is just way more diverse. I spent a bit of time in Chinatown. There's a considerable amount of Asian influence in LA that San Antonio and Texas in general doesn't have. I am pretty familiar with Tex-Mex culture as my ex is Mexican-American. Texas in general is more Mexican influenced than California.
San Antonio for percent Mexican ancestry, Los Angeles for total number of people of Mexican ancestry. LA being much more diverse, there isn't as much of a cultural dominance as there is in San Antonio. There are also a lot more non-Mexican Hispanic people in LA compared to SA. Finally, LA seems to have a lot more people of Mexican Ancestry from all over Mexico compared to San Antonio where more of the people have ties to Northern Mexico.
San Antonio has very few foreign born Mexicans. It’s not a magnet for Mexicans coming from Mexico anymore. Houston and Dallas many more times the amount of foreign born Mexicans San Antonio does. The “Mexicans” in San Antonio have been there for generations.
LA on the other hand has tons of Mexicans from all over Mexico and Mexicans that have been there for generations.
San Antonio. A lot if the Mexicans there are 4th generation or further back, so the culture has blended and mixed with traditional Texas culture. I.E TexMex.
In addition to the above points, the LA area I believe has more than 1 million Central Americans who are not Mexican. We can argue about whether or not they are that culturally dissimilar from Mexico (ironically, El Salvador is less Amerindian than Mexico, while Guatemala is basically an Amerindian country similar to Bolivia) that may give the outside observer the idea that they are Mexican when in fact they are not.
San Antonio's Central American population is significantly less, on the other hand so there's less risk of that confusion.
