These three southern metros have had a lot of progress building more walkable and transit accessible cores in the 2010s. Which will come out on top for density, walkability, and transit access by 2030? What current or upcoming development projects are most important for these metros this decade?

I can't say since I'm not familiar with what's happening in Dallas and Houston.

Atlanta does have some notable projects like "The Gulch" development which will fill a hole in downtown. There are plans to build light rail as. Midtown Atlanta is booming as usual. Buckhead is finally coming to its senses and working on improving walkability. The Atlanta Beltline is transforming the city and the metro when it comes to thinking about transportation. Suburban cities are building their own trails that will eventually connect to the Beltline and other trails.

I could be wrong but I believe Atlanta has a better walk ability score than Houston and Dallas.
Having lived in both Atlanta and Houston and spending years in Dallas I would put Atlanta first.

It feels the more Urban out the 3. Even some of their suburbs are a little more urban in feel than the 3.

1.Atlanta
2.Houston
3.Dallas

Atlanta is an older city than both, so it's understandable that its core is and will be more walkable than the other two.

Houston continues to build more highrises and has a denser population, however, Central Dallas is noticeably more pedestrian-friendly and continues to build upon it. I'm really enjoying the neighborhoods come together and becoming more of a cohesive core.

Houston is no slouch to this either and has enough to show for it.

Atlanta
Dallas and Houston are a toss-up.

Atlanta will likely still have the more urban core. Houston will likely still have the highest density of the three. Dallas is right in between the two. All three are pretty much right there with each other.
