I was unsure how Indian is lumped together with sushi.

Wasn't my intention to be trite with Asian food, just thought I would insert the categories of Asian together, and based on ones preferences select one or more and list where they think the best food is. Forget my list, everyone is free to make there own, mine was just based on suggestions. That's all.

no, no, no.... tex-mex is all in texas. hence tex-mex. that being said, San Antonio takes Tex-Mex. And clearly Mexican food varies even here in the US from Texas, Arizona, New Mexico, and California. Personally I'm not a fan of the mexican style of food here in California.... but people swear to me that its good in Los Angeles and San Diego. I just hope it's not Mexican food made for white people.
and for BBQ, I personally think that it deserves its own thread to see which state has better BBQ between Texas/Memphis/N and S Carolina.

This is basically my list...except I would argue almost every major city has a great steakhouse, I consider myself to be quite the foodie, and I have a hard time picking a best.

Pizza: New Haven, CT, and obviously NYC.
Seafood: Maine, nothing beats a New England clambake on the rocky shores of Maine. Honorable mention to Seattle, great selection of cold water seafood and Dungeness Crab, yum!
Steakhouses: El Paso & Denver, honorable mention to Brazillian churrasco steakhouses, some good ones in Boston. Good steakhouses are indeed found in most major American cities, it's such an American staple. But Texas really stands out.
Italian: Providence, RI (Federal Hill), Boston's North End second, South Philly's a good one too.
Asian - Chinese: New York City
Thai/Vietnamese: Seattle - so many to choose from in every neighborhood in Seattle. Thai food hasn't been the same since I left that city.
Indian: Cambridge, MA (based on my limited experience with it)
Japanese/Sushi: San Francisco
Mexican: Albuquerque/Santa Fe
Barbeque: Austin
Soul Food: Atlanta
Greasey Spoons/Diners: Connecticut, there is something so nostalgic and so good about a CT Diner. Also greasy spoons in the south (a la Paula Dean), particularly for breakfast, can't be beat!
Hamburgers/Hot Dogs/French Fries/Fast food: Southern California, also Green Chile cheeseburgers in New Mexico...yum!
Healthy Food: Seattle or Portland - West Coast produce is simply the best, and these two cities have the best farmers markets and best selection I have seen anywhere.

texmex was in parentheses and so I was basically ignoring that. Obviously SA is the hotbed for texmex, but texmex isn't Mexican.
In any event, I might expand my answer there to include most of the SW and Texas as well as LA, which it could be argued might have the best variety of Mexican cuisines.
