What's the correct word?: weight-challenged persons?
It's not about which word in "correct"...but a mature person knows not to use language that is offensive and/or derogatory to a particular group of people.
Calling overweight people "fatties" is no better than calling Mexican people "w*tbacks" or mentally challenged people "retards". Do you really need any further explanation or do you think you have it now?

You know, it only takes a little research to figure out some of these blanket statements are just based on ignorance.
I would say that California cuisine is wonderful. Lots of farms and the fresh foods that come from them. There is also asian/american fusion which I believe got it's start out there.
On the other hand Mcdonalds, Del Taco, Fatburger, In-n-Out, Jack in the box, Carl's Jr/Hardees were all founded and popularized in California. Last time I checked, burgers were all just as fatting and bad for you as Fried Chicken.
When it comes to Southern food, it is not as one dimensional as many people think. Southern food was the original fusion food and is a combination of traditional British, Native American, African, and French cuisine.
Yes, fried chicken is bad for you, but it's not like we eat that every day. Nor is fried foods the foundation of Southern cuisine. Ask any Southerner and they'll tell you that what makes Southern food "Southern Food" are the flavors developed from the spices and herbs used. Aromatics feature prominently in every dish and is what sets apart the fake Southern food that you get around the country from the real deal.
Vegetables also feature very prominently in any Southern meal. You haven't lived until you have had a real bowl of Hominy grits, Succotash, or fresh green tomatoes off the vine (not fried).
But valued most of all in Southern food is freshness. If you go to any Southerner's home (White or Black), a mark of a good cook is the use all fresh ingredients. I know growing up that the only thing allowed to be used in cooking that was prepackaged was flour or sugar. Preparing a Southern meal is usually a day long affair that is part of the whole experience.
Overall, I will say that both cuisines have their pluses and minuses. Each is different enough that I cannot say that one is better by merit. Personally, I prefer Southern food hands down.
Too much food is fried & is very unhealthful. In Los Angeles, they restrict how many fast food restaurants an area can have because it is unhealthy. And California has the strictest regulations on fats in food. People eat more vegetables here & they are either raw or lightly steamed. The South eats like they don't know how dangerous their diet is which suggest not very bright people.
Totally unfair comparison. The quantity, quality, and variety of meat and produce that California has almost instant access to is far and away by all accounts among the best in the world.
More fair would be the entire South vs California. In which it might still win.
Georgia food or "Southern cooking" is unhealthy because they fry everything & it shows with all the super fat people in the South. Who would want a greasy meal? California emphasizes fresh vegetables & a healthy diet which is of-course much more appealing to the average person.
If this statement were true, then why are 60% of Americans considered overweight and 30% considered obese? Wheatgrass is nasty. Colonics are gross. Get over yourselves. Seriously. The West Coast is a fantasy world that the rest of the country: a. doesn't understand, b. doesn't care about, and c. doesn't want to emulate. Most Americans like their food stuffed with imitation crab meat, topped with cheese, wrapped in bacon, and deep fat fried, all with a chocolate swirl on top.
I've lieved in both states. NO CONTEST CALIFORNIA wins. Not only is the produce fresh, but there are WAY more healthy options. Southern culture isnt really health consious. Everything is fired.

I guess you didn't read the several-page discussion about how wrong it is for people to stereotype southern food as unhealthy. Everything is not fried...but that is certainly an ignorant stereotype held by people who truly do not know.
