Sunday should be a good day for exploring a metropark.
If you're going to Mentor, I would check out Holden Arboretum, even though not a metropark. The nearby Lake Metroparks Penitentiary Glen and Chapin Forest reservations both are nice, and the Lake Metroparks Farmpark is fun. Check out the Kirtland Temple, if interested in history.
In Mentor, Mentor Headlands Beach State Park and the adjacent nature preserve are nice, perhaps a little like Santa Barbara as it's largely a long, straight beach (but no highway, boardwalk, or oil rigs in the distance
). Given the temperature of Lake Erie, it's likely the beach hasn't been cleaned up yet for the summer season and may be in a semi-wild state.
Other good Mentor attractions are the James A. Garfield National Historic Site, the Mentor Marsh, and the Mentor Lagoons Nature Preserve.
Edgewater, Wendy Park, and Rocky River Reservation would be good park visits on the West Side.
