RE the OP;

Of course it's OU/TX.

The Civil War is as good as most on the list. (you left it out)

I'd put The Backyard Bowl on there as well.

UM/UF is a better rivalry than UM/FSU. They need to bring it back.

OSU - Michigan is, in my opinion, the most heated game that has historically decided the most as far as National Championships and now BCS are concerned.

Thus, I think it is the biggest rivalry. There are other great rivalries too, but for football? It's the equivalent to Duke-UNC for basketball.

The Border War (KU vs. MU) gets pretty heated. Apparently it has its roots in the Civil War era.

Harvard-Yale gets nasty.
Wisconsin-Minnesota is good too
Arkansas-Texas had some good ones back in the day too
Other great ones: Nebraska-Oklahoma, Auburn-Georgia, Florida-Georgia

Of course there are numerous battles these where just the ones on top of my head. But i believe these are some of the most heated of them all, so thats why i put them one there.
