Have you looked at a course catalogue? A number of universities offer science classes for non science majors, so I would look into that. I took geography, general physics, astronomy and some kind of earth science/geology class. "Easy" is in the eye of the beholder.

Traditionally, astronomy.

Back in the day, we used to call the easiest ones "gut courses", for whatever reason.

I managed an A in each of two semesters of Geology, and I am a total lunkhead where sciences are concerned. It seemed to be largely a matter of memory rather than really understanding. So, I spent a week making a detailed outline of the textbook and memorizing it.

i need a science course that also comes with a lab. so astronomy is out of the question. the three listed are my options. i refuse to take anatomy & phisiology.

Each one of those choices at the most basic level is rote memorization. Do you want to memorize facts about plants or animals all day?

Pick one you like the topics in. If you like plants, then botany. If you like animals, then zoology. If you paid attention in high school, then biology. I took a ton of science courses and biology was the easiest.
