(South of Grand Junction, West of Delta/Montrose)

I'm thinking about driving up there for a day trip. Problem is that i have a 2 wheel drive car and all of the roads appear to be dirt once you leave highway 141

You will need at least a higher clearance vehicle. A two wheel drive vehicle will be okay as long as it is front wheel drive.

Well i'm also looking for more information on the area (cool spots to go to, what parts aren't private property, etc.). We were on 141 and turned onto a dirt road and drove about 1/2 a mile in (my car could make that part fine) and i later realized after looking at a map that that road went all the way to the butte. I was thinking of driving in as far as possible and hiking in the rest of the way. Maybe end up camping out in a tent somewhere (If possible)

That whole place is very interesting and it sounds like your car will make it just fine. I'd recommend simply hiking as much of the wilderness as possible. There is a map of the trail network available here.
BLM Colorado | Dominguez Canyon Wilderness

There are several campgrounds that you could choose from and the place is rarely crowded. I suggest taking Divide road off of Hwy 141 and going about 10 miles to Big Dominguez campground. Trails are easily accessible from this area too.

I've been there several times. A car will make it just fine, DO NOT try it after a rain.
