A few Fruita restaurants that I like eating at would be Camilla's (breakfast and lunch), Karma Kitchen (lunch and dinner--Nepal cuisine and quite good). Dragon Treasure Chinese Restaurant is good as well. The only other restaurants for breakfast regarding a mom and pop business would be Judy's. And Starvin' Arvins restaurant at the truck stop at exit 19.
Best restaurant IMHO in Fruita is the Hot Tomato. They have an interesting story too.

Is the frozen custard store still there? I haven’t been to Fruita in a long time.

I can’t believe you guys are suggesting Fruita and GJ to someone who has never been to Colorado before and will be driving through the heart of the Rockies. I love Fruita and GJ as much as the next guy, but I’m guessing the OP wants to see mountains!

Cute Victorian town. Good restaurants, shops, right on Lake Dillon. Easy on/off I-70. I often stay there if the weather gets bad when I'm driving west.
Check out Hotel Frisco, they often have lodging deals. Although the end of March is still ski season and spring break so rates may be higher.

I've always liked Frisco but have never spent the night there. For the record, I pulled up some prices regarding motels for one night, two people. I went with March 24th for check in time.

New Summit Inn-$149.00
Hotel Frisco-$129.00
Alpine Inn-$170.00
From there the price goes up---the Ramada is $238.00

A few prices for motels in Glenwood Springs--again, I picked March 24th for check-in for two people.

Silver Spruce Inn-$86.00
Roadway Inn-$68.00
Frontier Lodge-$79.00
Starlight Lodge-$89.00
Caravan Inn-$89.00
Hanging Lake Inn-$64.00
Quality Inn-$80.00

Then it goes up from there--Lots of places in the $100 and up range. NOW---if a person DOES want to go for a higher dollar place, I suggest the motel that is the most noted and the most historic, and a beautiful old building at that!. That would be the Colorado Hotel. Price starts at $160.00 and goes up, depending on the room.

I suggested Vail, but it will cost you in March. Frisco/Silverthorn/Breck are really kind of turning into mountain sprawl and beetle kill trees, but some may like that.
The best areas of the state like Telluride, Ouray or Crested Butte aren’t really accessible for the OP.
I still think the Colorado National Monument is spectacular and should be at least driven through. It’s only 23 miles long, but worth the few mile detour. The OP can continue onto the “mountains” even though there are plenty on the western slope including the largest flat top mountain in the world, the Grand Mesa.

Fruita and GJ in late March = SPRING greenery in the form of town yards with symmetrical umbrella trees showing off their new light-green finery. They are not native trees but popular there for their shade. Meanwhile, it is a crappy time in “the mountains.”

Besides, the OP will see mountains while driving on I-70. He doesn’t even need to stop to see them.
