Hello Coloradans,

DH and I are driving through CO next week, and we’re looking for recommendations on best places for wining and dining along I-70 between Grand Junction and Denver/Boulder (detours ok too).

We’re looking for good places for California wine selections, and light “healthy fare” food. Preferably in a romantic settings. It will be my husband’s first time driving through that area, we’re hoping to find something to impress him

Pastatively in Eagle was my favorite thing ever when I lived in Eagle County. Their food isn't light at all, but I believe they had a great wine selection, and the food was always amazing (and heavy).

Vail, Avon, and Beaver Creek will make you shell out the $$$, but there are some great restaurants there. Many will have patio seating as well, which is even better during aspen leaf season.

Sweet Basil in Vail is what comes to mind when I think of "wine and lighter fare." I actually didn't like it much specifically because I felt it was too light for what they charge. However, it was still very good and you may like that about it. And it's right there in the middle of Vail Village.

Pure Kitchen in Frisco is a health restaurant that has a pretty decent drink selection, and it's got a great view of the mountains. The only knock is that that view includes a parking lot and Whole Foods. It's one of my favorite restaurants in Summit County.

Vinny's, also in Frisco but downtown, is another good one. Rather expensive, but it's a good restaurant for a special occasion.

Also consider the "Sauce" restaurants: Sauce on the Blue in Silverthorne, Sauce on the Creek in Avon, and Sauce on the Maggie in Breckenridge. I believe they're all the same, but the one in Silverthorne is the one I go to. Large wine selection, good food (it's Italian but they do have some lighter stuff), nice patio by the river. It's got a tendency to be crowded af, but there's a reason for that.
