I'm looking to relocate in a community that is interested in sustainability, spirituality, maybe an artist's colony type place. Any places come to mind? Ideally, I'd like a college or university there and not too pricey to live there (not like Boulder's cost of living).
A population of 5,000 or more.

Two cities that come to mind are Salida and loveland. Salida is a mountain town an hour west of Pueblo and close to Monarch ski resort. Loveland is a art city located by Fort Collins Colorado. Another possiblity is Manitue Springs just west of Colorado Springs. I am sure there are more but that is all I can think of on the top of my head.

Check out Manitou Springs, just west of COLO SPGS. Near Colorado College and UCCS. No comparison to Boulder's prices.

I'm thinking of somewhere like Cuchara or La Veta or even Gardner, or Westcliffe.

You would have to consider Adams State College or Trinidad State Junior College for that area.

Or you've got the Gunnison area with Western State College right there and the most awesome body of water in Colorado which is Blue Mesa! Little chilly there, but that's not a problem, right?

Wink Probably Taos

Manitou Springs, CO might suit you, although I'm thinking maybe not. Worth a visit, if interested. Aside from the small size and remoteness I'd recommend Crestone, CO. Artistic sensibilities, if no actual market, high on the spirituality, new age index.

For all that you specified you might be best off in Taos, NM. It meets all your criteria in sustainability, spirituality, art, and size. One of the more expensive places in New Mexico, but people of modest means do it (in one way or another), and not as expensive as Boulder, CO. The University of New Mexico also has a branch campus there.

If you would prefer all the above in a larger container, try Santa Fe, NM. It is more expensive than Taos, with less options to live dirt cheap (as some manage to do), but bare in mind that to find all you desire in one place a certain price to be paid.

Definitely Santa Fe and Taos, NM.
Certain villages in between are also growing in the areas you mention - such as truchas, Chimayo and Poajaoque
