Some great suggestions, some I am taking note of myself. I only have a few to add:
-St. Elmo Ghost Town. I love this place, and sometimes just drive up on a Saturday morning before the motorcycles and ATVs get there.
-Gold Belt Scenic Byway (Phantom Canyon Road) I love stretching my Bimmer out on this twisty road.
-Spiral Road in Salida (Link)
-Swim in the Indian Pool in Pinewood Springs
-Mount Princeton Hot Springs
-and of course - Casa Bonita

My kids love feeding the chipmunks in St. Elmo and doing Mt. Princeton Hot Springs. Those two remain on our must do list each visit. The Sand Dunes down south are incredible.

Climbing up to one of my favorite draws to hunt deer and elk in the Laramie Foothills on a cold, dark November morning as Orion fades away and the sun rises. On one morning a few years ago, a coyote came within 20 feet of my spot, just out of curiosity I think.
Or flyfishing on a snowy January afternoon, when you have to flick the ice off the guides every dozen casts or so.

If you could, check out Royal Gorge Bridge and Park, Canon City, Colorado . When I was a kid, I really enjoyed that place and I still remember it, which is a good thing
