I uninstalled it. I couldn't stand Windows 10 either, and what did they do with Minesweeper?! The uninstall worked, but I still get those annoying "Upgrade to Windows 10" messages that randomly pop up.
I'm thinking of trying a new OS altogether, and I'm not taking about a Mac. Maybe Linux? I'll have to think about it; I've been a Windows user for a very long time.
I've done a number of rollbacks to 7 and 8.1, some of them succeeded, some did not. Almost all of the ones that succeeded ended up causing some havoc after the rollback. Good idea to have your important data backed up in case it fails.
I haven't had any major issue with Windows 10 as of yet on a personal level. However, we have yet to roll it out, officially, at work. I have a feeling that will probably take place soon. From what I've read, as long as you roll back the upgrade within the time frame (I think it's 30 days), downgrade should be rather simple. Like what NHDave said, I'm sure there are probably some issues once you rollback. Probably the best way to rollback would be to backup your data and just do a clean reinstall of Windows 7 or 8.1 (Personally I'd go with 7.)
As far as going with Linux, there are tons of distros out there and you can probably find one that is most "windows" like if you wanted to try. What I would suggest doing is downloading a live CD of whichever flavor of Linux you want and just run it off the disc to test.
One of the very common results of the rollback is a ton or corrupted tasks in Task Scheduler, users won't know they are corrupt and non functional unless they actually open Task Scheduler, which will then generate a boatload of errors. Have run in to this on every rollback to Windows 7 (I've done probably 20 or 30 so far). Luckily there's an easy fix. https://repairtasks.codeplex.com/
I have had zero issues on roughly 10 rollbacks.

If you take the time to configure it properly it is actually quite nice. I'm finding a lot of anti Windows 10 hate is coming from people that didn't pay close attention installing it and just accepted all defaults and click click click.
Now you've got "Groove" instead of the familiar Windows Media Player. And "Movies" instead of...Windows Media Player. And "Photos"....instead of Windows Photo Gallery.
Windows 10 is pretty good, actually. Where Microsoft screwed up is by creating these "Metro Apps" and trying to replace ... their own apps that people like...
Any machine I have switched to 10 I've created a disk image beforehand so I can go back if it goes FUBAR, never used the built in MS image tool to restore an image but haven't heard anything negative about it either. The other benefit is since I'm doing clean installs if there is any files I've missed or whatever I can always go back and get them.
You can do the same thing with 10, if the rollback goes FUBAR you can restore the image.
