I was playing with the idea of taking my 6 year old son on the Essex Train and Boat ride with the connection to Gillette Castle.
It says that the hike is moderate and young children and stroller should not go due to terrain.

I have done the hike but it was so long ago that I forget the specifics.

Do you think my 6 year old son would be able to handle the hike to the castle? ??

We did the hike with our six year old son several years ago. It wasn't a problem. The trail goes up a steep hillside but the trail traverses the hill and isn't an issue for folks reasonably in shape. My son loved the train, boat, hike, and the castle. The castle tour can be tough on young kids that like to be hands-on with objects in their environment. Also, it is a long day for young kids.
