I called the New Canaan parking and they told me I could park at the second stop Talmadge Hill. It never gets filled. Otherwise I guess the best bet would be South/East Norwalk.

There are different lots for the permitted spots and the daily spots so while I don't know anything about more permits than space (and some towns have waiting lists for years, so I can't imagine there is too much overbooking), the daily spots are not in competition with the permitted ones. While I cannot say for sure about 8 am, the S norwalk lots and covered garage do get full. I personally have had to catch a train from Stamford because I could not get parking in S Norwalk. Now that was around 10, so I am not sure about 8. But like I said earlier, most commuters to NYC will leave earlier than 8.
S Norwalk did have signs directing overflow parking to a shopping center lot a couple of blocks away, but I would have missed the train if I had parked and walked. So if you leave time in your schedule for a walk, it might work.
