I agree with Jay.

The mayo and often times diced celery both take away from the taste of the lobster. Sometimes it feels as though they are competing in terms of flavor.

But with the hot buttered lobster roll...Mmmmmm....it's just butter and lobster...the flavor is enhanced 10-fold. Yummy!!

I like both, however.

Logic: When you buy a boiled lobster for dinner at a fine restaurant, it's served with drawn butter. It is not served with mayo. The reason: Lobster and butter actually taste "right" when paired together. Mayo is great for steak & cheese subs, and ham sandwiches, and for combining with sour cream to create a decent onion dip. It is not for lobster. This is fact, it is not up for discussion, and my position is unassailable. Anyone who thinks otherwise should start a thread the Kentucky forum, where the inlanders don't know any better. <----smileys tripled to emphasize me, kidding.

I think the mayo makes more of a "lobster salad" which I really like-- but you're probably right in that it's not a true lobster roll.

I'm truly down for lobster any way its served.

Not sure where first Lobster Roll I had was on the Cape. It was cold with mayo and a red cabbage slaw. Lobster meat was minced mixed into the slaw. Topped with claw meat and the bun was toasted with butter. Was the most amazing thing ever. Don't know if I could do a warm lobster roll.

How can you even taste the lobster when mixed in with the cabbage? Lobster is too good on its own without its taste being masked by a strong flavor like cabbage. Sorry but ... yuck!!! Jay

This x1000.

I have also had a hot lobster roll with olive oil. A bit different that the traditional butter, but very good nonetheless. And worlds better than the lobster salad that passes for "lobster rolls" in the rest of New England.

Lobster = butter delivery system.

It's important to note also, with regards to the roll, there is a precise, scientific proportion involved in the preparation.

To wit:

Upon biting into the lobster roll, the butter absorbed by the bread must overtake the crunch of the grilled surface, and vaguely hint at sluicing between your front teeth. If it seems to drip wontonly into your mouth, it's too much. If the sluicing does not occur, there isn't enough.
