No denying that NYC water comes from an enviable source, unfortunately it travels over hundreds of miles of leaded pipes and a dilapidated infrastructure. Overinflated (like so many other) NYC urban legends.

But it still reacts the best with yeast -- maybe it's the lead i still crack up by all the "new" people who have moved into gentrified outer boroughs, who spend TENS of thousands of dollars to replace the old lead pipes inside their house, not realizing the "mains" coming in, are 100+ year old ones

I don't know about accustomed to. I had my first New Haven pizza at 25 after thinking NY has the best pizza.

Also, Danbury area pizza has always been lousy.

There's nothing mystical about the water.

1. The New Haven water quality
According to pizza expert Tony Gemignani (11-time World Pizza Champion), New Haven’s water quality is “moderately hard”, the most ideal type of water for making dough: “Water is the second-largest ingredient that goes into our dough recipes. Moderately hard water is the best. We tend to hate chlorinated or hard water, or water that has heavy limescale in it. The reason why New York, Chicago, New Haven, and San Francisco have great pizza is because of the water.” This type of water (slightly mineral-laden) makes the dough adhere more completely to itself, creating a denser, crispier crust.

It's OK. It's your taste and it's what you like. I've had NH Pepe's pizza too. Not saying it's bad at all so this is not a personal attack. -- I actually do like it. It's just not my favorite type. Not everyone in the state of CT believes that the sun never sets on New Haven like you do though

No 'tude intended. It seems that if someone doesn't like something NH is "known" for, then you get your panties in a bunch. I AM NOT SAYING I DON'T like it, Just that it's not MY favorite. End of story

And for the record I do like it, but it will never be something that *I* crave.
