Hello,
I plan to visit Corpus Christi sometime this winter. I am interested in water sports such as kayaking, swimming, surfing etc.
How much of a presence and danger sharks and alligators represent in the Gulf waters around here to swimmers, kayakers and such?
Also, I wonder how strong the winds are in winter?

From my experience in Corpus, you don't have to worry about alligators. All you have to watch out for is marine wildlife (i.e. crab, lobster, and small species of shark). Other than that, you have nothing to worry about!

There are sharks, but you are more likely to encounter stingrays. Don't worry about vicious crabs or lobsters
Alligators don't do salt water.

What do they have on the Texas coast, little rock lobsters...? I imagine Portuguese Man O War is a much bigger concern than anything else!

The Portuguese Man O War is probably my main concern when entering the water on the coast areas.

Naturally, if you watch TV with anything to do with sharks, that's going to be on your mind even if you know (well, almost know, nothing is dead certain) there are no sharks where you are going in. LOL Who knows, that just might be the time they magically appear in that area.

Aligator attacks are extremely rare in Texas but they do happen. Between 1948 and 2005 15 aligator attacks were recorded with 0 fatalities. There were twice as many shark attacks (30) recorded during that same time period and 1 fatality. FLMNH Ichthyology Department: The Relative Risk of Shark Attacks

Alligators can be observed in the Aransas Wildlife Refuge NE of Rockport Texas. You can walk along trails that pass between natural ponds inhabited by alligators and see them floating in the water or basking in the sun, and they make no effort to go near the tourists that are walking along the trails.

As above. There have not been very many fatalities in TX due to sharks, and the number of injuries is relatively small compared to the number of people in the water.
There is actually evidence of 3 shark deaths, but FLMH only reports 2 (there were two in Galveston and one in Port Isabel). There is also an unconfirmed report of 1 alligator death in Texas, but it was in the 1800s. I tend to think of it as more of an intelligence improvement over Florida and Louisiana instead of luck.

Beware of stingrays and jellyfish. If you get injured by either, hot water is the best treatment. You can try vinegar on jellyfish stings, but research indicates it isn't as useful as hot water (120ºF, not boiling). Meat tenderizer, urine, or anything else is ineffective.
