Hundreds of flights canceled?! How is this possible? Do they not know what Chicago winters are like? What's worse is that this is the second time this winter they had an issue!

That's a scary goof. They are not taking I inventory of vital supplies? What else might they forget? It's not like a car that can pull over and pick up a few things.

Sounds like they used more then expected, faster then "Normal" and were not able to restock fast enough, They get it from suppliers, who ship it to them, SW (any airport/airline) only has tanks to store X thousands gallons of it, and Once they get to X gallons "left" they tell the supplier to "Bring" more. With winter demand, the supplier may not be able to fill the orders fast enough. And they "run" out.
Everything has a cost (rules, regulations etc) to it, Some one at SouthWest Logistic/Planning determined that XX Thousand Gallons was the "Right Amount" to Store. To put in another "Tank" of XX thousands of gallons of could cost in the 100's thousands or Millions of dollars with the cost of the tanks, land/lease, environments factors, permitting etc. Plus the cost of product.

I understand all that but...This is the second time this winter that Southwest has run into de-icing problems.
Still sounds like someone miscalculated. It's Chicago, not Miami! There are still several weeks of winter left and weather temperatures are forecast a couple of weeks in advance.
In any case, I'd rather have my flight canceled than fly on a plane that wasn't properly de-iced!

I wonder what the cost of cancelling 250 flights comes out to be?
I wonder what the lost future business due to irritated customers amounts to?
Anyway, it's Chicago. Mid-continental climates normally have a wide derivation from the mean. Build bigger tanks. Make arrangements for supply on short notice. It's just logistics. The other airlines managed. And, yes, I know Southwest is the largest carrier at Midway. But that's irrelevant - every airline has to procure a sufficient amount of de-icer. The minor players at MDW like Porter or Ultimate may not use nearly the de-icer that Southwest does, but they also don't have nearly the storage capacity for de-icer, either. Yet they, and Delta and all the other airlines at Midway, somehow managed not to run out.
Nah, you guys just have earthquakes and fires and floods and mudslides and...
De-icing doesn't seems so bad now, does it?
Southwest Airlines should be ashamed of themselves. Whoever is in charge of their inventory planning at ORD needs to lose their job.
MDW - Midway...
