When you delete it from trash, it doesn't actually delete the e-mail. It hides it from your gmail user interface and moves it to google storage servers.
There's more smoke and mirrors than a men's club on fire.
We won't have one of those things in our home. They are evil.
I agree with you and I won't either. One question becomes how do you handle when you visit with someone who does have them in their home? It's their home, which means they can do what they want to as far as they are concerned, but their guests don't consent to this crazy spying. Do people who feel this way just simply refuse to visit them?
It's a little like someone who has a crazy dog in the house that paws all over visitors. Certainly the homeowner/resident can have a dog in the house, but that dog doesn't have the right to jump guests. It seems similar to this situation.
I have noticed this when swiping left on a message in my iPhone's Mail app:
iCloud

Hotmail

Gmail

I have run out of free space before in my Gmail account, where I was encouraged to delete some things to make room. You have to select "More..." then "Move" and move it to "Trash". Then delete it from trash.
You can change the swipe commands in your settings. Mine deletes an email when I swipe either left or right.
So for those who think Google, Facebook, smartphones, etc.. are all tracking your every movement, why use any of that? Why not delete your social media accounts, trash your smart phone, and minimize the time you spend online?

Doing that now, minus the smart phone.
Fun fact: iOS logs swipes, presses, and text entered, even if it isn't sent. These logs are able to be retrieved.

Just wait until car insurance companies start requiring a surveillance device in your vehicle in order to issue a policy. Landlords start requiring a 'character' score issued by some service that combs through social media. You're not allowed to do a gofundme or use a hosting service or a VISA business account because your politics aren't popular.
Do why have a smart phone if you think it's tracking you? Why not go to a flip phone or landline? Or do you believe those also spy on you?
I'm aware of it but I don't let it cripple me. I work for the telephone company, I know what we're capable of. But I think transparency is key. Someone in this thread might find the info useful and use it to make an educated consumer decision.
Do people have these things so that they are "cool", "hip" or "with the times" or do they actually find them useful? I find them to be a nuisance and an invasion of privacy. I know a bunch of people who got tired of "Alexa" after the novelty of their silly toy faded off.
The more of these things you allow into your home the less privacy you have. Anytime you put something on your wifi you creating an entry point for eaves droppers like google, Amazon, Microsoft, Apple along with hackers getting access to your network.
No. Unless you have no password on your modem or router or use something stupid like password or 12345 (people still do). Cracking a password can be easy, or difficult. That choice is up to you.
If you're using Maryhadalittlelamb you might feel comfortable with it. You shouldn't.
An example of the type of password on my router.

My online passwords are longer and more complex. This a password I use for a website that has been converted to # so the length can be seen.
