Your budget will not work for any 2 bedroom in Coppell; there are no apartments in Colleyville. Rakin's suggestion for Lewisville is a good one. There are some apartments around UD and I had a former tenant who lived in a rented condo in that area. Several young student families but its not an especially nice area and no cafes or shops around there. There is a family friendly community near UD in Irving called Beverly Oaks, but you won't find a 2 bedroom for rent under $1000/mo. and no cafes or shops nearby either. Las Colinas has some nice apartment communities but your budget isn't going to work there and LC is the nearest to UD. You could look in North Carrollton possibly, also try Euless.

Midcities. Hurst, Euless, Bedford. Definitely cheaper. Definitely not liberal. Actually not a horrible commute to UD. Schools could be better, but that's not likely a concern for you at this point.

I think I actually saw an Obama-Biden sticker in UP once, so there goes the family friendly conservative environment.

There are legends of cheap housing in UP for SMU students- usually not listed, you need to drive around and see the old fashioned handwritten signs, usually off Hillcrest between mockingbird and lovers.
