Seem like all the best and most diverse food places are all in neighborhoods and suburbs on the southern half of Dallas County

Can't tell if you're trolling. Best ethnic food is basically all in suburbs like Richardson and Irving at this point. Greenville Ave area is finally coming into its own, Deep Ellum too. There's plenty south of I-30 to like but by no means is it the only thing the area has going on.

Sure they have it but it's not high quality like it is south of i30

I'll bite. The restaurants north of I-30 seem to be just party spaces, places for dunk people on friday and saturday nights who don't notice the quality, or for exterior often tacky aesthetic and bravado. Like "$30? For this??". We went into a place called Tupinamba off walnut hill a while back and after that tasteless expensive ubiquitous mess thought how the hell do these people keep a space this big this close to town open? Deli News is another one. All that interior simulated "ambiance", props, and servers playing their pathetic characters for a $20 sandwich of meat between two slices of regular white bread.

Perhaps OP is saying that although the eating places south of I-30 range from not aesthetically pleasing on the outside to in shambles, the workers in there are crafting their foods delicately with years of experience. I couldn't confirm though because i've only eaten south of I-30 like two times

Tupinamba is not expensive. It's prices are 15-20% below market. And the food is good.

And your second sentence is ridiculous. What it tells us is that you look for "party spaces" full of drunk people, because "drunk people on Friday or Saturday night" make up maybe 3% of the restaurant clientele north of I-30.
