Me and my aunt are planning a similar trip come January (I'm moving to Denton for School)

A good place we were talking about visiting on the way is Tennessee (Hopefully Nashville)

Default NJ to Plano

We did our trip last July from Edison, NJ to Plano, TX. We stopped at Roanoke and Jackson (near Memphis). It was fun. We didn't plan ahead on where to stop/stay. Because it all depends on the road condition and the traffic at the time you are driving and how many breaks you take.
We just looked for a good exit with good place to eat. usually they those exits have nice hotels to stays too. (don't know about the pet policy as we didn't drive with one).
Here is my advice though..

While driving thru VA turn off your radar detector if you have one and drive in absolute speed limit. They love out of state license plates. I saw plenty of cars stopped for speeding.

Don't let your car run on reserve gas. In NJ ( or the entire north east for that matter) you will get a gas station at every exit and they are very close by. While driving south, the exits are far from each other and not all gas stations are 24 hours. Some will be closed during night hours.

and for the fun part.. when you stop for gas,, get out and fill on your own . full service is only in NJ

+1 to this, we ran out of gas (luckily only .25 mi from a gas station) bc we passed 1 exit w gas, GPS took us to another one that was shut down, and then we had to delicately drive to get to another one. Once the light goes on, try to get to the nearest station at the upcoming exit (if GPS indicates there is one).

Just did this trip from Nutley NJ to Dallas with two small dogs. Def check out the LaQuinta in Memphis. It was great accommodations and surprisingly nice!

I use booking.com and always read the reviews but have liked Comfort Inn and La Quinta a lot when traveling with pets

Great idea. Good Italian food is a rarity in Texas. Red sauce places in strip malls just don't cut it.
