Places we've taken friends/co-workers that want a "Texas" experience that they enjoyed (many already mentioned):

Nice:
Five Sixty - Everyone is always curious about Reunion Tower
Hacienda Ranch
Cattlemen's Steak House - Fort Worth
Houston's Restaurant/Kenny's Wood Fired Grill - maybe not so "Texas" but great feedback

Casual:
Love in War in Texas
Manny's Uptown
Ozona - bit of an "Austin" vibe
Rodeo Goat - big winner here

Mi Cocina in the Highland Park Village. It's a nice place, nice atmosphere and the mexican food is probably the best in Dallas.

Texas has a history of being proud of itself without having to fancy itself up. The most authentic Texan restaurants are not fancy. Tex Mex (La Hacienda is my recommendation) and BBQ (Hutchins is recommended) are the most Texasy of Texan restaurants and they are going to be on the casual side.

For something that is outside both of those and very Texas (but also very laid back and casual): Babe's.

For something a little more upscale (I am like the OP and don't do fancy much) Rick's on the square in McKinney.

I'm slanted towards north of Dallas because that's where we live and don't get into downtown very often. Rick's, as mentioned above, is a good option for Texas feel. It has the added benefit of being in downtown McKinney which has a charm most of our out-of-state visitors love. They have a nice bar upstairs that's very "Texas" for before/after cocktails or Landon winery. And Emporium Pies is a short walk away for dessert. You have an entire evening.

Most of the other chop houses, I feel like they are the same as everywhere else. When people visit us from out of state we typically take them to Kenny's for upscale because the service is always phenomenal, and La Hacienda for more casual. Hutchins or Hard 8 for BBQ.

McKinney is as far from downtown Dallas as Downtown Dallas is from Fort Worth. Rick's is great if you are in Plano or farther north. The Dallas restaurant that always comes to mind for me to recommend is Javier's.

Meso Maya is way better.

I like food. A lot. And eat out a lot. I'd suggest Dean Fearings in Dallas, Lonesome Dove in Ft Worth, with Reatas being in last place. (I like it, but don't love it).

Something like Jasper's.

It was "elevated" Texas/bbq.

They are closed now, but something like that...

I think you should go the other way. It may be blasphemy to hear this, but it's 2019 and they make good brisket in other states and are able to use their grills to make things other than the 3-4 meats common in Texas. In other words, elevated Texas bbbq is not hard to find.

So I'd got the opposite direction -as wax papery, eat with plastic forks on communal picnic tables, weigh your meat, with as many slices of lousy Mrs Bairds bread you can handle. That what Texas bbq is currently interested in maxing out on, and it's not that common anywhere else.
