Thank you suzco. It's very helpful.
The only way is to go to Asian markets each week? how about others? Just beef?
so we can not easily get live seafood for everyday meal?

Welcome to Denver. As a newbie myself, I'd love to read your follow-ups to market or restaurant suggestions or even recipes. Once you get settled, please post back... you might even build up a C-D clientele on a weekly basis (if you continue with your chef career)... Have a good relocation!

The Seafood Markets in Denver are not that extensive. Obviously, there is a established commercial connection to the coasts by wholesalers with everday flights to provide fresh seafood. The largest and oldest wholesaler, Seattle Fish, did at one time have a retail market, which has since closed. Northeast Seafood is another large wholesale supplier.

I think the freshest and the most extensive seafood in found in the Asian Markets, especially on Federal, just south of Alameda. This area is the our own Asian Community with Laotian, Vietnamese, and Chinese shops. Pacific Mercantile, as mentioned, is in downtown Sakura Square, our Japanese Community area, and has been around for decades and is well regarded. Hmart is the Korean Market and is found on South Parker which has grown to be a big ethnic community area.

Another good source is the growing Hispanic Markets in Denver. I would point you to Liboria Markets and Azteca Markets which are found in many locations. These stores would tend to have more sources from Mexico, Central America and South America. Of course, the other large chains of King Soopers, Safeway, Sunflower Market, Whole Foods do provide some good value and have good commercial wholesale sources.

As in any seafood purchasing, the buyer must be careful. The industry is not that well watched/regulated/inspected by authorities. There is much deception and fraud, from boat to store. It is fairly common for supplier to mis-identify species and origin, either by ignorance or fraud. Seafood is the only product, today, that we wild hunt (yes, I know there exist farm raised products) and sold in the retail market. Today, with wild supplies diminishing, I think there is more dubious products on the market and are not worth the high expense. In addition, products from polluted waters are very hard and sometimes impossible to identify.

Please do not tell me about wild game--that is not hunted in the wild but raised on ranches and federal inspected at slaughter (Exception: wild game can be provided for private clubs events for private groups but cannot be sold, wholesale or retail.)
