I would agree with everyone else here that I-80 would be the way to go.
Flipping the trailer? They want people to drive slow with them since they're not normally accustomed to driving a large truck or towing a trailer. I think it also depends on the type of trailer. You do have to go slower with the dollies where you drive the front wheels onto the trailer and the rear tires are dragged on the road. When we went from NC to CO my car was on a flatbed trailer, and I was going 75mph most of the trip. When we had the dolly it said max speed was 55mph on a huge sticker that you would always see when looking in the side mirrors.

Yes flipping the trailer is a possibility, and it happens more often then you might think. I've seen it almost happen a few times.

Thank you for the correction about the speed limit on U-Haul trailers. They have increased it from 45 to 55 MPH since the last time I rented one. I would still keep my speed around 55 while towing a trailer. In fact some states have a 55 mph speed limit for vehicles pulling trailers, anyway.

The problem in that video is that the towing vehicle wasn't a loaded down moving truck. I've also seem a light truck towing something heavier than itself which is just a recipe for disaster.

Your welcome on the speeds
