What is a good round trip price for a flight from New York to Denver around this time of year? I am seeing $250 right now.

That's pretty good. It's not the time of year that matters (other than major travel holidays). It's when you happen to book it and catch the bottom of the curve of their pricing games.

I concur. I'd buy that if it matched my dates. I travel frequently and see DEN-NYC (all airports) at $240-$350 range, barring holiday weekends as mentioned.

Also kayak.com has a historical fare graph so you can see past trends.

That sounds like a really good price. I know it was over the holidays, but my last flight to Philly was about $450.

How much time in advance do you have? That makes all the difference. Generally best fares will come around 30-45 days before the flight unless its holiday season, but be sure to buy at latest 14 days if not 21 days in advance. Being just a little flexible helps too. Flew to Newark, albeit with connections, for $190 over Thanksgiving weekend just by moving my return flight a day back. I'd say $250 is a decent, but not great fare unless you are going in less than 14 days.
