AT&T supports multitasking on their data plan. Verizon does not. This means that with AT&T you can talk on the phone, surf the internet, use network-aware apps and receive and respond to SMS texts all at the same time. With Verizon you cannot.

That said, Verizon has a reputation of providing a more stable network than AT&T. It's actually because of the very same reason: the AT&T network is congested with the multitasking while Verizon's does not have to deal with it.

So if stability is more important to you, the choose Verizon. But if the ability to multitask the data is important to you, then go with AT&T

by the way, the SIII is an outstanding phone. Probably the best phone on the market vs. the iPhone.
