CO, agree about outdoor activities, also the Air Force Academy, skiing too comes to mind about CO as well as gold rush ?

It's not exactly a meal, but to me, Colorado and the term "Rocky Mountain Oysters" will always be linked in my memory.

Actually, I think NYC should be striving to be more like Denver, rather than the other way around.

It's been a while since I've lived in Denver. It had some mighty fine restaurants back in the day and surely the restaurants there are even better now if only for the reason that more population brings more choices and competition for great cuisine.

However, I do agree with what folks have posted about Denver and Colorado in general not exactly being a "foodie" place. Practically everyone living in Denver these days comes from somewhere other than Colorado, so there's not so much emphasis on a strictly "Colorado" cuisine.

Of course, there's always beef - it's what America eats and some of that beef still grazes on the public lands of Colorado before being shipped off to the feedlots in Denver. There's nothing wrong with a nice steak medium rare and you can't get much more Colorado than that.

Unless you want to go for a nice rainbow trout dinner. Colorado cut throat and other native trout make the finest meal ever when flipped right out of some mountain stream and straight into the frying pan - no restaurant required. And elk is pretty Colorado, as well. Skip the venison and find a restaurant that specializes in other wild game. Is Bent's Fort still around? They were once a Colorado icon, specializing in stuff like bison and elk and other game. Sorry we're so "out-doorsy," but this IS Colorado, after all.

PS My part of Colorado is known for its pinto beans and elk stix.

Here in Las Vegas, I see Colorado Chili everywhere....never saw it in 30 years of living in Colorado though!
