Hi all...
we are looking for a house 2/2 and animal friendly
with over 1 acre
that allows horses
that is NOT a cookie cutter
that is near denver (we have land in Idaho Springs and really like that area, but we have been screwed
-in the bad way by a local log home builder)

any suggestions of areas that will fit this bill?
we can afford 250-300k

Actually, your criteria is pretty specific, so why not just do a quick real-estate/MLS search. There's not many properties that meet your criteria, and the ones that are there are not all that close in, but there are some properties out there.
