I will be going to a concert at Red Rocks in April, and will probably be staying as close to that as I can get, looks like Morrison is the nearest city, right? What all is there to do in that area? I'm kinda looking for nature-related stuff, like some botanical gardens, or state parks? And how about spiritual/new age type shops? Any organic health food stores?

Bear Creek Park is across the street with the Soda Lakes where you can rent boats/paddle boards. Supposedly the cleanest lake in the state because of the soda ash deposits.
There are lots of trails to hike right in the park and Dinosaur Ridge with its ancient footprints is also right across the street.
Morrison generally is a pit stop on the way into the park or up Bear Creek Canyon. Don’t expect a lot in town except some marginal restaurants and chatzky shops.

Just to be clear, Morrison is well within the Denver metro and a thirty minute drive from downtown in good traffic. You're not going to be in a remote mountain town, so no reason to limit yourself to Morrison. Denver has a great botanical garden right beside Cheesman Park. Boulder is 45 minutes away and is essential the world capital of new age shops and natural grocery stores.

I'm just leaning against driving in downtown Denver, it's twice as big as Minneapolis (I'm in MN) and I can barely handle driving there! Boulder sounds right up my alley, and hopefully smaller, lol

Denver and the twin cities are comprable in size and cityness.

Mount Falcon Park and Matthews Winters Park are both very close to Red Rocks and offer very nice hikes.

For a nearby dose of a quaint/cute/surprisingly lively downtown, you might visit nearby Evergreen and Lake Evergreen, about 10 miles away.
