Wow! I miss Denver. I've gotta check out Edwards sometime; and thanks for the links Live!

I used to go to the Tony's Market on Dry Creek I believe. They've got some good stuff too.

Cumberland sausage? Couldn't find anything on that, but I did stumble onto this link; Bavarian Sausage Express! This place is in Aurora evidently. I'd never been there but it looks good!

I remember searching for Kishka back in the day as I had the stuff when I went to Schaumburg and also when we went to The Orbit Restaurant (also had potato pancakes, yum!) and finding some places off of leetsdale or somewhere. So while looking for that, I stumbled onto this; The Deli Techessen of Denver.

Lenardo's in Aurora is great! On the corner of Chambers and Smoky Hill Rd, also a great place for all thing Italian.

Anyone have good recipes for making their own? I have a grinder/stuffer that I've used a bunch...but it's been really a big hassle of trial and error to get a good batch. Some are good, some are bad, but usually I end up making a 5 pound batch at a time.

Not locally. I guess I could order them somewhere online but apparently nobody in the Front Range does them.

Sausages, Sausages all over Denver. Nothing goes better with the craft beers that is found in Colorado. Great Article in the Rocky Mountain News today about Sausages:

Links to Denver: Artisan markets turning city into sausage mecca : Food : The Rocky Mountain News

Now, get your mouth around a sausage, have a beer and celebrate the democracy in this country, and the variety of people who bring their sausages that make this country great and delicious.

That article only focuses on Carbone's Italian Sausage Market and Deli, one single meat market. How exactly does that qualify Denver as a "sausage mecca"? Milwaukee is home to the Klement's Sausage Races, which take place before the bottom of the 6th inning at every homegame at Miller Park. Wisconsin is also home to several national brands of sausages such as Klement's, Usinger's, Sheboygan Bratwurst Co., Bavaria Sausage, Old Wisconsin, Johnsonville, and of course Oscar-Mayer. Denver isn't a mecca of anything. Denver isn't even known as a tailgating city like Milwaukee or Green Bay. Stop trying to hijack an identity for your city.

You didn't read the entire article. A list of other local sausage makers was referenced. Furthermore, what's so great about Johnsonvillle and Oscar-Mayer? Their products are loaded with artificial ingredients and MSG. Sounds like you never attended a Broncos game either. The tailgaters begin arriving en masse at 7:00 a.m., with grills and smokers at the ready. I know-I am one of them. ESPN had an interesting stat over the weekend. Based on the past 20 years, Denver's Mile High is 2nd only to Green Bay in home field advantage.

Canino's is tasty Italian sausage.
I went to school with Clyde Canino (up at CSU in Ft Collins) and he used to make us delicious homemade pizza in the dorm. He has a restaurant up there (or did back in 2005.)
The article mentions Oliver's. I don't know if they make *all* of their sausage themselves, but they have their own bbq/smoker and are very busy in their little back kitchen. I just want to make a little plug for them, they are honest and devoted guys but have lost business to some of the big chains.
