I am considering making a move to Denver. My interests are the outdoors, hiking, running, etc. Denver looks like a great area to start a new life.

My job status is unique. The majority of my work will be in Southern California, but the cost of living there is so high, I am not sure I can afford the housing. My company would pay for a hotel during the week, and my airfare to place of residence.

Basically I would be working Monday - Friday in Southern California, and then commuting back to Denver.

Any recommendations on nice areas to rent an apartment in the Denver area? Price range would be $750 - $1000 a month.

You can afford the housing in Southern California, either with roommates, by living in the ghetto, or by living in the High Desert or the Inland Empire. If they are willing to pay for a hotel and airfare for you to go back and forth from Denver, why wouldn't they be willing to pay you a little more so you can afford to live (better) in CA?

You can live anywhere (outside the super-yuppie places), in Denver (per your price).

However, after awhile your weekly vacation to Denver will wear thin and you'd probably end up spending your weekends in CA in the outdoors, hiking and running.

Find a job in Denver, or make your current employer cough up a little more to stay in CA.
