Modern whole wheat has been shown to improve health.

The Mediterranean Diet has a pretty significant amount of wheat in the form of bread, pasta, couscous, and cereals.
Modified paleo is a better approach to take, single ingredient foods are what to focus on that include: vegetables, fruits, some starches, and lean meats. That is what I generally adhere to.

Is anti-wheater the food equivalent of anti-vaxxer? (Without all the children dying needlessly, obviously).

Pretty much, yes. All based on pseudo-broscience.

They are even convinced that wheat causes mental illness.

Modern whole wheat is beneficial to health. High intakes of whole wheat and other whole grains are associated with a decreased risk of heart disease, obesity, hypertension, cancer, and diabetes, to name just a few.

People are not more hungry after a meal with whole wheat. People who eat whole wheat and other whole grains have lower body fat than people who do not.

Have you guys ever been fat? Low carb diets work and are easy to maintain. Low fat diets don't work.

It's not about low carb or low fat. Neither of those things work long term. It's about whole foods with sensible portions.

I have always eaten in a healthy, sensible manner. So, of course I have never been overweight.
