Give yourself a cheat day to eat whatever you want that day. You'll look forward to it and won't go insane by eating the blander/healthier food for the rest of the week.
I would suggest only make it one or two cheat meals per week but in moderation instead of going all out on a full day and having the side effects to deal with.
Some very good posts here about cooking and experimenting with spices and simple baked dishes.
It's really hard to help because you give no examples of what you like, or what you consider boring.

it just looks to me like someone fabricating an excuse for not reducing calorie intake. if you dont want to make a change, then you will find an excuse.
Many if not most people do not prefer diet foods. They choose to eat them because they want to be thin and healthy.
Honestly there are times when I think I would rather eat strychnine than look at yet another dry salad. Ugh. There isn't much that is healthy and won't make you fat that tastes good. You just have to look for not totally disgusting. I think this is what keeps me thin. I am sick and tired of what I can eat so I just eat nothing for days at a time. I don't keep anything tasty in the house so nothing tempts me. If I look in the fridge, all that's staring back at me is another salad. So I go work out and take pleasure in the fact that I just look like an old bag and not a fat old bag!
I LIVE for birthdays, out of town vacations, and holidays. Those are my cheat days and I can eat anything I want. I plan them and make lists. If I didn't have my cheat days I couldn't do it. I would fail completely. But that's me. You have to find out what works for you.
My advice for you: invest in a crock pot and then start searching online for low calorie crock pot recipes. So many chicken and pork recipes can be made in a crock pot and are very tasty.
I often bake fish in foil. I spray the foil with Pam, sprinkle a seasoning mix like Cajun Spices on both sides and bake it. Some veggies cooked on the stove and maybe a salad complete the meal. It winds up being about 200-250 calories total.
