Drinking a pound of water, no calories, would also result in a gain of one pound. In longer terms a pound of fat (lard, oil) is around 4,000 calories. A pound of sugar is 1,500 calories. A pound of iceberg lettuce might have 50 calories. If you eat a pound of anything, you'll gain a pound. Over the longer haul the lettuce is almost entirely water and digestible fiber that you sweat, ****, and crap out. A pound of lard has higher energy density than human fat so you'd gain slightly more weight, mostly from retained water, once it's digested and stored.
Most people's bodies can utilize those carb calories.
Fat, eating it past a certain point, may lead to quite a bit being passed-out with a bowel-movement, maybe a rather sloppy bowel-movement, depending on the person.
