Let's say you could do a controlled experiment regarding eating. And I'll take an extreme case, which admittedly is not logical.

If you could keep everything else equal and you had a person eat 1 pound of pure sugar, or 1 pound of pure fat, would they gain:

a. 1 pound
b. less than 1 pound
c. more than 1 pound

and why

A pound of granulated sugar contains about 1,540 calories

A pound of lard (which is pure animal fat) contains roughly 3,674 calories.

I'm guessing that they would probably gain around 1 pound on the sugar and more than a pound on the lard

Assuming you weighed them right after consumption they’d gain exactly 1 pound in each case. Same as if they ate a pound of anything else.

I’m assuming gross weight gain, and nothing to do with calories.

And if I weighed the next day, I'd gain 3 lb or so water weight with the sugar, nothing with the lard.

A pound.

Drinking a pound of water, no calories, would also result in a gain of one pound. In longer terms a pound of fat (lard, oil) is around 4,000 calories. A pound of sugar is 1,500 calories. A pound of iceberg lettuce might have 50 calories. If you eat a pound of anything, you'll gain a pound. Over the longer haul the lettuce is almost entirely water and digestible fiber that you sweat, ****, and crap out. A pound of lard has higher energy density than human fat so you'd gain slightly more weight, mostly from retained water, once it's digested and stored.

Most people's bodies can utilize those carb calories.

Fat, eating it past a certain point, may lead to quite a bit being passed-out with a bowel-movement, maybe a rather sloppy bowel-movement, depending on the person.
