Here's one of my favorite easy recipes: Roasted Broccoli and Cauliflower
It's a delicious alternative to just eating raw vegetables and you only need 4 ingredients.
So you can easily knock out two servings of vegetables with this.
Ingredients:
Frozen Broccoli
Frozen Cauliflower
Olive Oil
Garlic Salt
Instructions:
Pre-heat the oven to 425
Pour frozen broccoli and cauliflower onto a baking sheet.
Drizzle with olive oil and sprinkle with garlic salt.
Cook for 25-30 minutes.
Enjoy!
I roast my broccoli with garlic and olive oil. I could eat it every day.
Potatoes cut thin (round, like round chips). Garlic, fried onion, oregano, salt, tomatoes sauce or crushed. Parmesan or nutritional yeast for vegetarians/vegans.
-oven 350 F;
- cut 3 big potatoes like I described above;
- use a spray (olive oil) for baking tray;
- mix in a bowl tomatoes sauce, fried onions (cut thin) and crushed garlic. Add salt here, dried oregano and other condiments, what you want, pepper etc;
- start with a layer of potatoes, then add 1/2 the sauce mix from the bowl, and on top parmesan cheese; repeat with the second layer of sliced potatoes, then the sauce mix and again cheese.
Cover with a aluminium foil and bake at 350 F for an hour.
Done!
Tip: you can add soy meat to it, mushrooms, use green onion instead or regular onion, or leek. You can add feta cheese instead of parmesan, beaten eggs (3-4) and pour on top everywhere at the end, before you top with parmesan/feta cheese. Also can use fresh/dried parsley, dill instead of oregano. Or you can add some pesto in the tomato sauce and not add salt anymore. Just use your imagination and what you can find in the fridge.

Another quick low-calorie meal is "5 ingredient pizza tortilla" from My Fitness Plan. It is a whole wheat tortilla but I used low-carb tortillas for even fewer calories. Tomato sauce (with a sprinkle of red pepper flakes), spinach, and cheese. Bake in the oven and that was 216 calories.

It certainly would keep you full, but it would keep me fat, unless that’s all I ate all day. I’d have one slice of Dave’s Killer thin sliced (70), 6 oz tuna, and a drizzle of olive oil.
