For me it's far more pragmatic, which option gets me out of that store faster? If there is nobody in self-checkout but lines in the manned registers, I'm doing self checkout. If I've got a lot of fruits/veggies that I don't know the codes for I'll go for the manned registers as well. To hell with all this notion of self-righteousness indignation over services, I'm not offended to run a damned packaged of bologna over a scanner.
I’m in total agreement with your post

I would absolutely use the self-check at Costco (I'm in and out frequently, so never have huge cartloads of stuff), but they don't take cash, only cards. I always pay with cash and so self-check is a no-go for me there.

The only thing that bugs me are the flimsy plastic bags which wind up turning onto their sides and spilling your work all over the place. The rest of the ergonomic issues are trivial to me.

I agree. I don't even care about looking up produce.

I can't find the post you quoted, but I just make sure I get a code sticker off the tomato/cucumber/potatoes/onions....whatever I am buying ..... so I can punch in the code. I am so much faster than the checkout person.

My complaint with self checkout is I don't have the full counter like thingee where I can shove my stuff.....I have to bag it right after scanning. They are challenging my spatial skills.
The ladies at my supermarket know me and think I am a good checker.

The advantage of no interaction with what is many times a nasty, rude cashier makes
self-checkout well worth the small amount of work it requires, IMHO.

I can't even remember the last time I had a nasty or rude cashier.
