These services are profitable only if they deliver groceries that you don't return because of their quality and freshness. Never had a fruit or vegetable delivered that was questionable in quality or appearance.
We use instacart weekly ..no issues for the most part ….we pay little in fees with a membership …we save a lot keeping me out of a store with my impulse buying
It's the old Traveling Salesman problem in mathematics (well, Operations Research, actually).
It is so seemingly simple to solve yet so computationally difficult that you couldn't solve them in real time. Back in the Mainframe days, you could easily set up the equations but it might take years of CPU calculations to arrive at the answer. Modern heuristics have really helped, as of course wicked-fast computation of modern microprocessors and cheap memory.

I enjoy going to grocery store,you never know what is on sale and find surprises,and it is good to see and feel what you buying or not buying,learn something along the way,if you have kids,you should take them to the store to see the real thing,not staring at a damn digital picture
I haven't used on-line grocery shopping yet. I like choosing my own produce, I like to browse the carts of clearance merchandise and I'm pretty immune to impulse purchases other than maybe once a month finding something interesting at a markdown- it show I "discovered" farro!
Since I live alone, though, I'm grateful that it's an option if I'm ever stuck at home, say, recovering from surgery, and can't get out.
I tried shopping services like Instacart before and wasn't impressed. Amazon Fresh is pretty good for me for certain things, and I'm close to a warehouse so I'm sure that has something to do with it. But I like shopping for myself and deciding what to get on the fly. Unless I can't physically go out myself I see no reason to pay someone else to do it when the result will be less than ideal.
The article linked in the OP doesn't even support this. It isn't about efficiency making it work, it's saying it's unsustainable on a large scale.
